I like stuffed peppers but am not a huge rice fan so I came up with a variation that works well and is good. My sons all like them and my bf who has never had a stuffed pepper he liked does like mine.
I usually make 4 of them, it's 2 meals for us.
8X8 or 9X9 inch pan lined with foil
Green Peppers, tops cut off, seeds taken out, I boil them for about 5 minutes to soften them a little bit. I get larger peppers.
1-2 pounds of Ground beef, browned and drained, then add
1 jar salsa
Croutons, any flavor
Tomato sauce as needed
I end up with a mixture that is not too thick with croutons and stuf the peppers with it. I place the rest around the peppers if there is extra.
Bake at 350 degrees for 45 minutes to 1 hour
I top them off with shredded cheese and sour cream
