Vegetarian Roasted "Turkey" Thanks for Laurie C. of Santa Cruz, CA for sharing this recipe.

1 Vegetarian Turkey - such as Tofurky (Vegetarian Chicken works well also) - QUARTERED
1 onion 1 tbsp crushed garlic1 tsp crushed ginger1/2 tsp ground black pepper1/4 tsp turmeric2 tbsp chopped fresh cilantro1 tbsp Moroccan olive oil3 - 5 strands Moroccan Taliouine saffron
1/4 cup chopped fresh parsley1/2 pound almonds1/2 cinnamon stick2 cups watercouscous, pre-cooked

Preparation:
In a large bowl, mix ginger, pepper, garlic, tumeric and olive oil. Add vegetarian Turkey (Chicken) , mix until all pieces are well coated. In a food processor or blender, prepare a paste of onion, parsley and cilantro.

Place vegetarian turkey (chicken) in a oven pan and add onion-herb mixture, almonds, cinnamon sticks and saffron. Add water to cover.

Bake at 350 degrees for 30 minutes.

Before serving, remove cinnamon stick. Top with a sprinkle of cilantro. Serve over a bed of couscous.
